Not only are these recipes fun to make, but they are great eating as well. You'll get a pat on the back from the crowd you feed.
Jump-on-me Margaritas:
1 can frozen limeade
1 cup tequila (more or less)
3 shots Triple Sec (more or less)
1 can Grapefruit Soda pop
2 cups ice
Course Salt (optional)
Place all ingredients, except salt, in a blender and blend until smooth and slushy. Cut a fresh lime in wedges and wipe the rim of each glass. Salt rims heavily. Pour and enjoy. Serves ONE, or sometimes about 4.
Bacon, Avocado, Cheese Omelet:
16 eggs beaten
1/2 cup water
2 sticks Butter - melted
1 Lb Bacon - cooked and crumbled
4 avocados - peeled / 1/2" cubes
2 cups Jack cheese grated
Salsa - your choice.
Sour Cream (optional)
In large pot combine all omelet ingredients and pour into foil-lined dutch oven and bake at 375 until set. When done serve hot on a bed of Romane lettuce, topping each serving with Salsa and / or Sour Cream
Beer Batter Fish Fry:
1 cup Bisquick
1/3 cup corn meal
1 Tbs each salt and pepper
3- cans beer
2 Lbs fish fillets
Combine all dry ingredients and add beer to get a sticky consistency for dipping. Salt fish and dip in batter. Deep fry at 375 until golden brown.
McDonalds Big Mac Secret Sauce:
1/4 cup Miracle Whip
1/4 Mayonnaise
3- Tbs Wishbone French Salad Dressing (orange stuff).
3 Tsp. Vlasic dill pickle relish
1 Tsp. each: sugar, minced onion, white vinegar, ketchup.
Pinch of salt.
Mix all ingredients well in container. Microwave high 25-30 seconds. Stir well again. Cover and refrigerate at LEAST one hour before using. Makes about 1 cup, enough for 6 burgers.
Slr's Tortilla Soup:
1/2 stick Butter
1/2 cup olive oil
1 large white onion chopped
3 Tbs minced garlic
1/4 cup Uncle Wayne's Garlic Seasoning
2 large carrots diced
6 ribs celery diced
2 Lbs raw chicken meat diced
2 Tsp each: Cumin, Chili Powder, Salt, Lemon pepper.
4 Tsp. Frank's Hot Sauce
1/2 cup flour
1 can 14 oz. diced tomatoes
1 can corn drained.
4 cans 10 oz. chicken broth
Tortilla Chips
Juice from 1 fresh Lime or Lemon.
Garnish: Avocado wedges and grated Cheddar cheese. Cilantro (optional).

Heat butter and oil in large kettle. Saute onion, garlic, carrots, celery and chicken; simmer 6 minutes. Mix in seasonings, flour and hot sauce. Add diced tomatoes with juice, drained corn and broth. Simmer 1 hour. To serve put Tortilla chips in bottom of soup bowls, add soup mixture, garnish. Serves 6-8
Kelcee's PJ Sandwich:
2 slices Weber's thin-sliced sandwich bread.
Creamy Peanut Butter - Jiffy
Grape Jelly
Real Butter
Spread the butter on one side of each bread. Spread the Peanut Butter thickly on one bread. Pile on the Grape Jelly on the other bread. Smash together so everything oozes out. Enjoy.
